The Experience 

Three and a half hours on foot through Palermo in a small group, with a local guide and at least four stops — one dish at each.


The line-up is the city's own: sfincione, the Palermo take on pizza, thick dough under fresh tomato sauce, anchovy paste and onion. Panelle and crocchè in a sesame bun, chickpea fritter and potato croquette in the same sandwich. Arancina, the deep-fried rice ball stuffed with meat, smoked ham or spinach. Granita — fruit, sugar and ice, topped with coffee or chocolate. Cannoli filled with ricotta and candied fruit or pistachio. And panino ca meusa, spleen boiled and fried in lard, if you want it.


It is all on foot, so you cover ground between stops. What comes out is the usual line-up rather than a fixed menu, and allergies go in at the time of booking.
