The Experience 

Three hours in a kitchen on Via dei Banchi Vecchi with a Roman chef and a small group: tiramisù first, then fresh egg pasta by hand — kneading, rolling, cutting fettuccine.


Then you pick the sauce. Pomodoro e basilico, amatriciana, or cacio e pepe. Your pasta is cooked while you have a glass of Italian wine, and you sit down and eat what you made. Limoncello or espresso to finish.


My pick for a first trip to Rome when you want one hands-on afternoon instead of another queue, and for anyone who has wanted to learn cacio e pepe from someone who makes it every day.
